I moved to Chicago, IL where I am now the CEO/Executive Chef of Audentia Catering and also working under Chef Evan Percoco at TheWit Hotel in Chicago, IL which was named "Top 25 Trendiest Hotels in the United States, #1 in Chicago" by Trip Advisor's Travelers Choice 2012.
Throughout my entire life I have been in love with food and cooking. To me, every dish I create is my best dish because I put the same amount of energy, focus and passion into every component from a simple grain of salt to a complex sauce. I put myself on the plate.
